The recipe calls for RPM’s signature Steak Salt to taste, which can be purchased online.

Wagyu Smash Burger

This is not your average burger recipe

Ingredients:

INGREDIENTS FOR BURGER
4 brioche buns
2 4 oz. ground wagyu patties (can substitute your favorite ground beef patty)
2 slices Widmer 1 Year Aged Cheddar
2 Tbsp. Yuzu Kosho aioli
1 pickle, sliced
RPM Steak Salt, to taste

INGREDIENTS FOR YUZU KOSHO AIOLI
1 cup Kewpie mayo
½ Tbsp. lime juice
1 ¼ tsp. kosher salt
½ Tbsp. tamari
2 Tbsp. + 1 tsp. Green Yuzu Kosho (available online)

Method:

METHOD FOR YUZU KOSHO AIOLI
1. Combine all ingredients in a mixing bowl and whisk to combine until smooth.

METHOD FOR WAGYU SMASH BURGER
1. Preheat oven broiler.
2. Season both sides of the ground beef patties with RPM Steak Salt.
3. Place the patties in a very hot cast iron until a crust is established on one side, then flip the burger and smash it down.
4. Top each patty with a slice of cheddar cheese, place in broiler and melt the cheese.
5. Brush both sides of the bun and briefly place in broiler to get a nice golden brown toast.
6. On the bottom bun, spread yuzu kosho aioli and then add 5 slices of pickle and place both patties on top. Top with the other bun.
