Three Dots and a Dash takes the popular Dead Reckoning cocktail and turns it into zero-proof with their Undead Reckoning recipe. Tangy verjus takes center stage, skillfully emulating the red wine nuances typically found in late-bottle vintage Port. The Three Dots’ “Undead” syrup contributes seamlessly to the mix, introducing a delightful layer of flavor complexity in the absence of rum and brandy.
Undead Reckoning
The Hangover-Free Cocktail
Yield: 1 cocktail
Ingredients:
INGREDIENTS FOR UNDEAD RECKONING
2 oz. Verjus Rouge
2 oz. pineapple juice
¼ oz. fresh lemon juice
1 oz. Undead Syrup
2 oz. club soda
16 oz. crushed ice
INGREDIENTS FOR GARNISH OPTIONAL
2 pineapple fronds
1 pineapple wedge
1 lemon wheel
1 edible orchid
INGREDIENTS FOR UNDEAD SYRUP
2 Tbsp. sarsaparilla bark
½ vanilla bean (split)
½ cup water
½ cup white sugar
2 Tbsp. maple syrup
Method:
METHOD FOR UNDEAD SYRUP
1. Place sarsaparilla bark and vanilla beans in a cold pan and add water.
2. Bring to a boil, then immediately reduce to end the boil, holding at 180°F for 15 minutes.
3. Strain vanilla and sarsaparilla.
4. Add white sugar and maple syrup, and mix to combine.
5. Refrigerate and store for up to one week.
METHOD FOR UNDEAD RECKONING
1. Combine Verjus Rouge, Pineapple Juice, Fresh Lemon Juice, and Undead Syrup into a cocktail shaker.
2. Whip shake with 16 ounces of crushed ice.
3. Add club soda to the cocktail shaker*, then pour the cocktail into the tropical mug of your choice and top with crushed ice.
4. Garnish with pineapple fronds, pineapple wedge, lemon wheel and edible orchid.
*Be sure not to shake the cocktail after the club soda is added to the cocktail shaker. Pouring
the cocktail into the mug will gently incorporate the soda without ruining carbonation
