Partner & Director of Operations for the Windy City Smokeout and Lone Star Smokeout

Callie Revel is a Partner & Director of Operations for the Windy City Smokeout and Lone Star Smokeout and an Associate Partner for Lettuce Entertain You Restaurants, where she has spent her career since joining in 2008 as one of the company’s first social media managers.

As a Bay Area native and a graduate of DePaul University in Chicago with a degree in psychology, Callie’s unique background informs her thoughtful approach to hospitality and operations. Callie has played a pivotal role in the growth and success of Windy City Smokeout in Chicago. The 2022 winner of the Academy of Country Music’s (ACM) "Festival of the Year” award, Windy City Smokeout has become synonymous with pairing the biggest names in country music and BBQ, and sees over 100,000 attendees throughout the weekend. Since the inception of Smokeout in 2013, Callie has coordinated and managed all logistics surrounding the festival, including event flow, sponsorships and ticketing strategy. In May of 2025, Callie will oversee the first-ever Lone Star Smokeout at AT&T Stadium in Arlington, Texas. Working closely with the world-class Dallas Cowboys organization, Callie is excited to bring Lettuce’s spin on hospitality to a new market in North Texas.

Throughout her career at Lettuce, Callie has managed the launch of over a dozen restaurant openings, including Summer House - Lincoln Park, Pizzeria Portofino, The Oakville Grill & Cellar and Sushi San - Lincoln Park. Among her proudest achievements are Summer House on the Lake at Disney Springs, which made its highly-anticipated debut in December 2023, and the acclaimed RPM Seafood in Chicago. Her leadership and project management expertise have helped shape these ventures into must-visit destinations for both locals and out-of-town guests alike.

Callie credits much of her professional development to her mentors within the Lettuce family, including executive partners Rich Melman, R.J. Melman, Jerrod Melman, Chris Meers as well as Michael Cunningham. Outside of work, she loves traveling, cooking and embarking on adventures with her husband and two rambunctious kids, Cade and Bryce.
