Joshua Hauer is the Director of Operations and Partner at some of Lettuce Entertain You Restaurants’ most popular bars and restaurants including award-winning tropical bar Three Dots and a Dash and barbeque restaurant, Bub City, both located in Chicago’s River North neighborhood.
Born in Miami, FL, Joshua's knack for hospitality started at a young age when he was working at a nightclub in Tallahassee, FL while attending school at Florida State University, he realized he wanted to make a mark in the entertainment and hospitality business.
After attending college,Joshua moved back to South Florida and continued to work in the nightlife industry as a bartender. In 2000, he started his career in hospitality management with Rare Hospitality Incorporated, Longhorn Steakhouse and The Capital Grille in South Florida, where learned the dynamics and core values of running a restaurant as a kitchen manager, front-of-house manager and a corporate trainer, getting exposure to all aspects of the business. In 2002, he became the youngest general manager of Miller’s Ale House, Inc., a fast growing chain restaurant in Boca Raton, FL. There he developed his philosophy and mantra “treat the business like you own it.”
In 2005, Joshua joined Rockit Ranch Productions to oversee The Park Sports Club and Tequila Ranch at Seminole Paradise at The Hard Rock Casino in Hollywood, FL. Joshua then relocated to Chicago to become a part of Rockit Ranch Productions as the project manager and the general manager of The Underground Nightclub. He later became a Partner with Rockit Ranch Productions overseeing several of its concepts in Chicago including some of the city's hottest restaurants and nightclubs like Sunda, Rockit Bar and Grill, Rockit Burger Bar, and The Underground Nightclub.
In 2014, Joshua had an opportunity to join Lettuce Entertain You Restaurants as the General Manager at the award-winning tropical bar Three Dots and a Dash. The bar was named one of the World’s Best 50 Bars and was also recognized on several national top bar lists including Esquire Magazine. He later began to oversee operations, menu development, hiring, training and more at other Lettuce restaurants including Bub City and Hub 51. Today, he serves as the Director of Operations for Three Dots and a Dash, The Bamboo Room at Three Dots and a Dash and Bub City, all in Chicago’s River North neighborhood. He is passionate about working closely with his partners and team to inspire and grow future leaders within the organization.
