Matt Dolin
Associate Partner, Ramen-san
Matt Dolin is an Associate Partner for the Ramen-san brand of restaurants, overseeing day-to-day operations, coaching managers, developing teams and driving the growth of Lettuce Entertain You Restaurants' renowned “San” portfolio. Known for his expertise in menu development and operational efficiency, he continuously seeks new opportunities to elevate the Ramen-san experience.
Originally from Atlanta, Matt grew up in Buffalo Grove, IL, where his interest in hospitality was sparked in high school while working at PF Chang’s. He pursued a Bachelor’s degree in Hospitality Leadership with a focus on revenue management from DePaul University, graduating in 2012. His love for the dynamic environment of the hospitality industry and the joy of building relationships have fueled his career ever since.
During his tenure at Lettuce, Matt has been instrumental in the success of several brands. Starting out as a server at Big Bowl in Lincolnshire in 2009, he quickly advanced, subsequently serving as Manager, Assistant General Manager and Wine and Beverage Director at Osteria Via Stato. His leadership skills led him to oversee the opening of multiple restaurant locations, including Sushi-san, Ramen-san Fulton Market, and Ramen-san Deluxe, where he later took on the roles of General Manager and Director of Operations.
Matt lives in Berwyn, IL, with his wife Kori, whom he married in 2022. Outside of work, Matt enjoys dining out, biking, snowboarding and hiking.
