RPM Italian Now Open in Las Vegas
The Modern Italian Restaurant by Lettuce Entertain You Restaurants and Giuliana and Bill Rancic
RPM Italian is now open on the Las Vegas Strip at The Forum Shops at Caesars Palace. The restaurant, from Lettuce Entertain You Restaurant partners R.J., Jerrod and Molly Melman and celebrity couple Giuliana and Bill Rancic, is the first Las Vegas location for RPM. This marks the sixth restaurant from the RPM brand including RPM Italian in Chicago, RPM Italian in Washington D.C., RPM Steak, RPM Seafood and RPM Events in Chicago, with a seventh restaurant opening early next year in West Palm Beach, Florida.
“This year marks the 10th anniversary for RPM Italian, and what a great way to celebrate this milestone by opening in Las Vegas,” said R.J. Melman, President, Lettuce Entertain You Restaurants. “Lettuce has loved being a part of this fantastic restaurant community for more than 20 years, and we are excited to bring RPM Italian to the Las Vegas Strip and to The Forum Shops at Caesars Palace.”
At the heart of the menu is the pasta program with more than a dozen daily housemade options from the signature Mama DePandi’s Pomodoro with Genovese basil to the Spicy King Crab with squid ink spaghetti and Fresno chili and the newly created Black Truffle & Uni Spaghetti, that’s finished tableside with shaved truffles.
To start, guests may choose from a wide selection of hot and cold antipasti such as the Dungeness Crab Scampi, Maine Lobster Caprese and Imported Burrata & Caviar in addition to housemade breads, salads and wood-oven pizzettes. Entrees span Italian classics such as Black Truffle Chicken Vesuvio with charred lemon and crispy potato, steaks and chops such as Prime Dry-Aged Bistecca Fiorentina and simply grilled fish and seafood dishes including Whole Grilled Mediterranean Branzino with capers and green olive salsa verde.
RPM Beverage Director and partner Richard Hanauer, a Wine Enthusiast “40 Under 40 Tastemakers” recipient and also named “Sommelier of the Year” by Food & Wine Magazine, has designed the wine program that focuses on the best of Italy and the west coast, with an emphasis on Italy’s greatest vineyards.
Designed by award-winning architecture and design firm Rockwell Group, the modern and plush space dons a color palette of black and creams. Guests are welcomed into the restaurant by a large olive tree behind a polished, Calacatta marble host area. Just beyond is the 26-seat, marble-topped bar sitting alongside lounge space reminiscent of an Italian garden. In the main dining room, an expansive open kitchen lines the entire length of the spacious room while circular banquettes face the kitchen alongside the opposite wall.
“It’s been an incredible 10 year journey for us, and to open in Las Vegas at The Forum Shops at Caesars, it just doesn’t get any better,” said RPM Italian Partner, Bill Rancic. “We are thrilled to now add this iconic culinary city to our list of dining destinations.”
