The Gin Commission Opening in Lincoln Park this Weekend
The Gin Commission – an intimate, gin-focused cocktail bar from Lettuce Entertain You is opening Saturday, June 25 in the lower level of Quality Crab & Oyster Bah (1962 N. Halsted) in Lincoln Park.
The Gin Commission will be open Fridays and Saturdays and offer a curated list of more than 50 gins from around the world. Leading the beverage program is industry veteran Kevin Bratt (of Joe’s Seafood, Prime Steak & Stone Crab) who created a menu that features both classic and unique interpretations of the spirit, as well as an extensive Gin Tonic program. And yes, we said Gin Tonic – not Gin AND Tonic. The Gin Commission is inspired by the coastal regions of the world where there are no ampersands or “ands” to be found on the menu.
Additional highlights include a variety of rare gins like Scapegrape Premium Black from New Zealand, Príncipe de Los Apóstoles from Argentina, Elena Penna from Italy and Xoriguer Mahón, as well as interesting cocktails including a Dusty Rose Vesper with Glendalough Rose, Ketel One Citroen, Alessio Bianco, and Giffard lichi-li, the Nordesiño with Nordés, Albariño, tonic and lemon, and the Thistle Do with Hendrick’s, Carpano Antica Formula and Cardamaro.

To complement the cocktails, Quality Crab and Oyster Bah’s executive chef Donny Farrell has created a menu of seafood-focused small bites and snacks. Highlights include: Garlic Butter Grilled Oysters with charred lemon, Hand-picked Blue Crab Beignets, Gin-cured Salmon Belly with house ricotta and pickles, and a Caviar presentation of American sturgeon caviar with traditional accouterments.
The Gin Commission is open Fridays and Saturdays from 5:00 PM – 11:00 PM. Reservations are encouraged, but not required, and can be made via Tock.
