Baked Door County Cherry French Toast

Baked Door County Cherry French Toast

A great brunch dish for entertaining

Yield: 1 Casserole, 9 pieces

Ingredients:

4 large eggs
1 cup sugar
2 cups whole milk
2 cups whipping cream
2 tsp. vanilla extract
8 Tbsp. butter, melted
1 (1 ½ lb) brioche loaf, cut into 2” cubes, additional if needed
1 pint Door County cherries
Maple syrup, for serving
Whipped cream, for serving

Method:

1. Preheat oven to 350°F.
2. In a large bowl, whisk together the eggs with the sugar until smooth. Then whisk in milk, cream and vanilla. Next, whisk in the melted butter until combined.
3. Into the custard mixture, fold in the brioche cubes until most of the custard is absorbed.
4. Scrape the mixture into a 12”x10”x2” deep casserole pan evenly. Let it rest for 10 minutes.
5. Cover with foil and bake for 1 hour.
6. Carefully remove the foil and continue to bake uncovered for 25 more minutes.
7. Remove from the oven and let it rest for 30 minutes before serving.
8. Cut into 9 pieces and serve with Door County cherries, warm maple syrup and whipped cream.
