Kale Tabbouleh

A refreshing Mediterranean salad recipe

Yield: 2-3 Servings

Ingredients:

1 cup tuscan kale, finely chopped
1 cup swiss chard, finely chopped
2 cups mint, finely chopped
2 cups parsley, finely chopped
2 cups cilantro, finely chopped
1 cup quinoa, cooked
2 cups peaches, diced or seasonal fruit/vegetable of choice
½ cup olive oil
¼ cup lemon juice
1 cup pomegranate seeds
1 tsp. kosher salt, additional to taste

Method:

1. In a large mixing bowl, combine the tuscan kale, swiss chard, mint, parsley, cilantro and cooked quinoa.
2. Gently fold in the pomegranate seeds.
3. Drizzle olive oil and lemon juice over the mixture and toss until evenly coated.
4. Season with salt to taste.
5. Add diced peaches (or seasonal fruit/vegetable of choice) and gently toss.
6. Serve with grilled chicken, salmon filet, steak or protein of your choice.
