Mediterranean Salad

Ingredients:
INGREDIENTS FOR SALAD
8 cups chopped romaine lettuce
2 pinches salt
4 turns fresh black pepper
¼ cup kalamata olives, pitted
¼ cup sliced cucumbers
¼ cup sliced radish
¼ cup sliced red onions
¼ cup sliced baby bell peppers
¼ cup chopped pepperoncini
¼ cup crumbled feta cheese
¼ cup halved, cherry tomatoes
INGREDIENTS FOR GARNISH
8-10 sprigs fresh dill
8-10 Italian parsley leaves
1 pinch dried oregano
1 large drizzle Sicilian olive oil
INGREDIENTS FOR ITALIAN VINAIGRETTE
1 tsp. red wine vinegar
1 tsp. lemon juice
1 tsp. water
¼ tsp. sugar
1 pinch oregano
2 Tbsp. olive oil
¼ tsp. shallot, finely minced
¼ tsp. garlic confit, smashed
1 pinch fine sea salt
1 pinch black pepper
1 pinch chili flake
Method:
METHOD FOR ITALIAN VINAIGRETTE
1. Combine red wine vinegar, lemon juice, water, sugar, oregano, shallot, garlic confit, sea salt, black pepper, and chili flakes in a bowl.
2. Whisk in the olive oil until combined.
3. Taste and season as needed.
METHOD FOR SALAD
1. Place chopped romaine lettuce in a mixing bowl. Add Italian vinaigrette and season with salt and pepper.
4. Add olives, cucumbers, radishes, red onions, sliced baby bell peppers, pepperoncini, feta, and tomatoes.
5. Garnish with dill, parsley, oregano, and extra virgin olive oil.
