Straight “A” Salad

Beatrix is sharing the recipe for their Straight “A” Salad. It’s a mix of arugula, almonds, Asian pear, asiago cheese, and avocado — yep, that’s where the name comes from. Think of it as the salad that’s acing nutrition while keeping it deliciously interesting.
Straight “A” Salad
Nothing but A-list ingredients
Yield: 4 servings
Ingredients:
INGREDIENTS FOR STRAIGHT "A" SALAD
6 cups baby arugula
¼ cup toasted almonds
¼ cup shaved asiago cheese
1 Asian pear, cut into matchsticks
1 avocado, diced
5 leaves fresh basil, sliced
⅓ cup white balsamic vinaigrette, recipe below
INGREDIENTS FOR WHITE BALSAMIC VINAIGRETTE
1 cup olive oil
⅓ cup white balsamic vinaigrette
⅓ cup fresh squeezed lemon juice
1 Tbsp. granulated sugar
1 tsp. kosher salt
Method:
METHOD FOR WHITE BALSAMIC VINAIGRETTE
1. Add olive oil, white balsamic vinegar, fresh squeezed lemon juice, granulated sugar and kosher salt to a bowl.
2. Whisk together until thoroughly combined.
3. Store in a sealed container and refrigerate until ready to use. Shake well before using.
METHOD FOR STRAIGHT "A" SALAD
1. Add baby arugula, toasted almonds, shaved asiago cheese, matchstick pears, diced avocado, basil strips and white balsamic vinaigrette to a mixing bowl.
2. Gently toss together until combined.
3. Pile onto a chilled plate.
