Akiko Freeman, who leads winemaking, was the first woman to receive a Green-White medal from the Dar Nihon Agriculture Society of Japan, honoring an exceptional contribution to the agriculture industry. Today, Freeman Winery is recognized as one of California's most acclaimed small producers. Ryo-Fu, meaning "cool breeze" in Japanese, is a fitting name for the Chablis-reminiscent wine that is shaped by the cooling microclimate that defines the Russian River Valley.

Alain Graillot, 2021 $130From chemical engineer to celebrated vintner, Mr. Graillot found a nook of the world to literally dig into and propel into the limelight. Previous to him, Crozes-Hermitage's Syrahs lived in the shadow of its tiny and elite neighbor, Hermitage. With the help from some friends of Burgundian wine prestige, he took long unattended vineyards and a quite under-attended winery to create a Syrah with far greater intrigue than thought possible from here. Deep with inky black fruits, savory spices wound all around them, and a broad but not domineering body - it's clear why the late Alain Graillot is enshrined in French wine history and why his sons now masterfully follow in his footsteps.

The history of IWA 5 sake is tied to the life of Richard Geoffroy, former Dom Pérignon chef de cave who founded the IWA Sake brewery in Japan in 2019 He's known for his blending skills and innovative approach to sake making Geoffroy's appreciation for Japan and its people led him to establish the IWA Sake brewery in Tateyama, Toyama IWA 5 is made using an experimental process that changes every year The sake is a blend of three Japanese rice strains (Yamada Nishiki, Gohyakumangoku, and Omachi) and five yeast strains, including a wine yeast The kura is designed to channel the core principles of IWA: inclusivity, horizontality, and community Geoffroy's goal is to make a sake that is true to Japan, and to contribute to a story that has a centuries long history
